Sobrebarriga

A long, flat and very tasty cut typical of Venezuelan and Colombian cooking. Ideal for shredding, baking with beer or slow cooking. One of the most popular meats in Latin America for its flavour and texture.

Muscle Trapezius (outer part of the rib cage)
Feature Layer of fat that adds juiciness
Best for Shredding, baking, slow roasting
Price per kg €12.99/kg

How to cook it

  • Sobrebarriga a la criolla: Marinate with beer, bake with sofrito for 2h. The classic Colombian recipe.
  • Venezuelan carne mechada: Pressure cook for 50 min, shred and sauté with onion and pepper.
  • Baked with beer: Sear, add dark beer, panela and spices. 2h at 170°C.
  • Slow roast: Season, cook covered with vegetables for 3h. Tender, aromatic result.

⚡ Tip: Sobrebarriga needs a long cooking time to release its collagen and become tender. Do NOT put it on the griddle or it will be tough as shoe leather.

🍴 Recipe: Beer-Baked Sobrebarriga

Serves 6 · 2h 30min

  • 1.5kg of whole sobrebarriga
  • 2 onions, 4 ripe tomatoes, 4 cloves of garlic
  • 1 red pepper, 1 ají dulce
  • 1 tablespoon of grated panela (or brown sugar)
  • 500ml of dark beer
  • Salt, pepper, cumin, oregano
  • Oil, mustard, Worcestershire sauce
  1. Season the sobrebarriga with salt, pepper and cumin and spread it with mustard and Worcestershire sauce.
  2. Sear the piece in a pan with very hot oil for 3 min per side.
  3. Transfer to a baking tray. Cover with sliced onion, tomato and garlic.
  4. Pour in the beer and sprinkle the panela over the top.
  5. Bake covered with aluminium foil at 170°C for 2 hours.
  6. Uncover, baste with its juices and bake for another 20 min to brown.
  7. Rest for 15 min before slicing. Serve with arepas, rice or papas chorreadas.

🇨🇴 The emblematic dish of Colombian cuisine, also very popular in Venezuela. The beer and the panela make an irresistible natural glaze.
